Place boiling water, sugar, instant coffee and cinnamon in medium bowl. Mix just until combined. Beat mixture with an electric mixer until stiff peaks form, about 2 minutes.
Mix milk and vanilla in 12- to 16-ounce glass. Add desired amount of ice.
Spoon whipped coffee mixture over milk in glass. Sprinkle with additional cinnamon, if desired. Stir just before serving.

•For stronger whipped coffee, try using espresso powder.
•Use your favorite non-dairy milk. Great with almond milk, oat milk, or coconut milk.
•For a flavorful twist, try with different extracts in place of vanilla. Stir in raspberry, almond, maple, or any of your favorite McCormick Extracts. We suggest starting with a small amount of extract and adding more to taste.
