INGREDIENTS

Servings: 2

Ingredients

  • Strawberry Vanilla Syrup
  • 1 cup fresh strawberries, hulled and halved substitution Substitutions available
    • frozen strawberries
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 teaspoons McCormick® All Natural Pure Vanilla Extract
  • Shortcake Martini
  • 2 vanilla sandwich cookies, finely crushed
  • 1 tablespoon red or pink sprinkles, optional
  • 2 ounces (1/4 cup) prepared Strawberry Vanilla Syrup, plus more to garnish
  • 3 ounces vodka
  • 1 ounce amaretto
  • 8 ounces (1 cup) half-and-half

INSTRUCTIONS

  • 1 For the Strawberry Vanilla Syrup, mix strawberries, water and sugar in small saucepan. Bring to boil; simmer 5 to 10 minutes, stirring occasionally until sugar is dissolved and berries are softened and pale in color. Remove from heat. Strain mixture through fine mesh strainer, smashing berry pulp with spatula to drain as much syrup as possible. Stir in Vanilla. Cover and refrigerate syrup until ready to use or place bowl in ice bath to cool quickly.
  • 2 For the Martini, mix crushed cookies and sprinkles on small plate. Place 1 tablespoon Strawberry Vanilla Syrup on separate small plate. Dip rims of 2 (8 ounce) martini glasses in syrup to moisten. Dip in cookie crumbs to coat. Drizzle inside of glasses with additional syrup, if desired. Set aside.
  • 3 Fill cocktail shaker half-full with ice. Add vodka, amaretto, half-and-half and 2 ounces Strawberry Vanilla Syrup. Shake vigorously 30 seconds. Strain into prepared glasses. Serve immediately.

    Test Kitchen Tips:
    • For a sweeter cocktail, add additional Strawberry Vanilla Syrup when shaking mixture, or spoon 1 tablespoon syrup into bottom of glass before pouring.
    • Refrigerate remaining Strawberry Vanilla Syrup in an airtight container up to 2 weeks, or use to make Strawberry Orange Mimosas for your Galentine’s Day Breakfast or Brunch!
