  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk - Substituteswater
  • 2 tablespoons oil
  • 1 teaspoon McCormick® Garlic & Olive Oil Seasoning
  • 1 teaspoon McCormick® Oregano Leaves
  • 1/2 teaspoon McCormick® Dill Weed
  • Quinoa Bowl
  • 3/4 cup uncooked white quinoa
  • 1 1/2 cups chicken stock - Substituteswater
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup thinly sliced red onion
  • 1/2 cup halved kalamata olives
  • 1/2 cup crumbled feta
  • Chicken
  • 2 each boneless skinless chicken breasts, cut into 1/2-inch pieces
  • 2 tablespoons oil
  • 2 tablespoons McCormick® Garlic & Olive Oil Seasoning
  • 1 teaspoon McCormick® Oregano Leaves

Instructions

  1. For the Sauce, whisk all ingredients in small bowl until well blended. Cover and refrigerate until ready to serve. 
  2. For the Quinoa Bowl, rinse quinoa; drain well. Mix quinoa and stock in small saucepan. Bring to boil on medium-high heat; reduce heat to medium-low; cover and simmer 15 minutes or until quinoa is tender and liquid has been absorbed.
  3. Meanwhile, for the Chicken, toss chicken with oil and sprinkle evenly with Garlic and Olive Oil Seasoning and oregano. Heat large skillet on medium-high heat. Add chicken; cook and stir 6 to 8 minutes or until cooked through.
  4. Divide cooked quinoa among 4 bowls. Top evenly with chicken, tomatoes, cucumber, red onion, olives and feta. Drizzle with Sauce to serve.
