- For the Sauce, whisk all ingredients in small bowl until well blended. Cover and refrigerate until ready to serve.
- For the Quinoa Bowl, rinse quinoa; drain well. Mix quinoa and stock in small saucepan. Bring to boil on medium-high heat; reduce heat to medium-low; cover and simmer 15 minutes or until quinoa is tender and liquid has been absorbed.
- Meanwhile, for the Chicken, toss chicken with oil and sprinkle evenly with Garlic and Olive Oil Seasoning and oregano. Heat large skillet on medium-high heat. Add chicken; cook and stir 6 to 8 minutes or until cooked through.
- Divide cooked quinoa among 4 bowls. Top evenly with chicken, tomatoes, cucumber, red onion, olives and feta. Drizzle with Sauce to serve.
