Preheat oven to 400°F. Line a large, rimmed baking sheet with parchment paper. Mix cranberry sauce, lemon juice, cinnamon, vanilla and cornstarch in a small bowl until well blended. Set aside.
-
On a lightly floured surface, roll out puff pastry sheet into a 10-inch square. Using a pizza cutter or sharp knife, cut pastry into sixteen squares, about 2 1/2 inches each. Transfer squares to prepared baking sheet. Cut brie into thin squares, about 3/4-inch wide. Place on center of each puff pastry square. Spoon a scant teaspoon of cranberry sauce mixture over top of brie. Brush edges of pastry with egg.
Test Kitchen Tip: Place brie in freezer for 15 minutes before slicing to help firm it up, making it easier to cut! The rind on brie, is edible so no need to remove it before slicing.
-
Bake about 15 to 20 minutes until puffed and golden brown, rotating pan halfway through. Cool on wire rack 15 minutes before serving.
