Servings: 24 (2-tablespoon)

Ingredients

  • 1 pound (about 5 to 7) plum tomatoes, cut into 1/2-inch cubes
  • 2 tablespoons oil
  • 1 tablespoon all purpose seasoning basil oregano garlic
  • 1 tablespoon fresh lemon juice
  • 3/4 cup coarsely chopped smoked salmon
  • 1 package (8 ounces) whipped cream cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons thinly sliced fresh basil

INSTRUCTIONS

  • 1 Preheat oven to 425°F. Mix tomatoes, oil and Seasoning in large bowl. Place in single layer on large, shallow, foil-lined baking pan.
  • 2 Roast 25 minutes or until tomatoes are soft and browned on top. Let cool.
  • 3 Mix cooled tomatoes and lemon juice in large bowl. Add salmon, cream cheese and mayonnaise; gently stir until well blended. Garnish with basil. Serve with sliced baguette or crackers. (Makes 3 cups)
