Ingredients

  • 1 tablespoon vegetable oil
  • 1 package (8 ounces) mushrooms, sliced
  • 1 medium red bell pepper, cut into chunks
  • 8 ounces butternut squash, cut into 1/2-inch cubes (about 2 cups)
  • 1 can (14 1/2 ounces) petite diced tomatoes, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 package French's® Chili-O Onion
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 cup frozen corn, thawed

INSTRUCTIONS

  • 1 Heat oil in large deep skillet on medium-high heat. Add mushrooms, cook 4 to 5 minutes or until tender and lightly browned. Add peppers, squash, tomatoes, tomato sauce, and Seasoning Mix. Cover.
  • 2 Bring to simmer. Cook and stir 10 to 15 minutes or until squash is tender. Stir in corn. Cook 5 minutes longer or until heated through. Serve over cooked rice, if desired.
