  • 3 pounds sweet potatoes, peeled and cut into 1-inch pieces
  • 1 large red onion, peeled and cut into 1-inch pieces
  • 5 tablespoons olive oil, divided
  • 1 1/4 teaspoons salt, divided
  • 3 tablespoons French’s® Hot Honey Mustard, divided
  • 2 tablespoons cider vinegar
  • 5 slices bacon, crisply cooked and crumbled
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 450°F. Place potatoes and onion in large bowl. Drizzle with 3 tablespoons of the olive oil and sprinkle with 1 teaspoon of the salt in a large bowl. Toss to coat evenly. Spread on foil or parchment-lined sheet pan.
  2. Roast 30 to 40 minutes or until potatoes are tender, stirring halfway through cooking. Allow potatoes to cool to room temperature.
  3. Meanwhile, mix remaining 2 tablespoons olive oil, Mustard, vinegar and remaining 1/4 teaspoon salt in large bowl. Add cooled sweet potatoes, bacon and parsley; toss gently to coat. Serve immediately.
