INSTRUCTIONS

  • 1 Start by adding ground chuck (80% beef and 20% fat provides excellent flavor) to a medium sized mixing bowl. Add in 1 tablespoon Montreal Steak Seasoning, shredded Jack cheese and diced jalapeño. Hand mix.
  • 2 Cut your onions in half crosswise, removing a few of the center rings to make a well. Keep the outermost rings intact. Fill the bottom half of the onion to the top with the meat mixture. Repeat the same process for the other half of the onions. Now, place the two halves together to form a ball and wrap them in bacon. Use toothpicks to keep the seal closed. Season the bacon layer with a light coating of Sweet & Smoky Rub.
  • 3 At this point we will fire up the grill (I like to use charcoal) and when the coals are all active place the stuffed onions down and crisp the bacon on the seal side first. Rotate and crisp the bacon on all sides for a few minutes per side. Now move to the indirect side keeping the temp at medium-low (275°F).
  • 4 After 30 minutes of grilling, grab a saucepan and mix all BBQ sauce ingredients. Mix and simmer over medium heat for 12 to 15 minutes. Remove and let rest for 6 to 10 minutes.
  • 5 Glaze the bacon wrapped stuffed onions with BBQ Sauce and grill for an additional 10 minutes.
  • 6 After a total of 1 hour or at an internal temperature of 165°F, remove the Bacon Wrapped Burger Stuffed Onions.
  • 7 Serve and enjoy!

    Tips: Be sure to soak the toothpicks in water for about 20 minutes prior so they won’t burn during the grilling process.
