Ingredients 8 Servings

  • 2 pounds pork tenderloin
  • 2 tablespoons plus 1/2 teaspoon McCormick® Grill Mates® Bacon Chipotle Seasoning
  • 3 teaspoons lime juice, divided
  • 2 tablespoons honey
  • 1/2 pineapple, peeled, cored and cut into 3/4-inch slices (about 4 rings)
  • 1 small red bell pepper, seeded and quartered
  • 1 small red onion, peeled and cut into 3/4-inch thick slices
  • 1 tablespoon chopped cilantro

INSTRUCTIONS

  • 1 Sprinkle tenderloin with 2 tablespoons Seasoning. Mix 2 teaspoons of the lime juice and honey in small bowl; set aside.
  • 2 Grill pork over medium heat 25 to 30 minutes or until desired doneness, turning occasionally and brushing with honey and lime mixture during last few minutes of grilling. Let stand 5 minutes before slicing.
  • 3 Meanwhile, grill pineapple, bell pepper and red onion 5 to 7 minutes or until lightly charred and tender-crisp. Cool slightly. Coarsely chop and place in medium bowl. Stir in remaining 1 teaspoon lime juice, 1/2 teaspoon Seasoning and cilantro.
  • 4 Slice pork tenderloin and serve with the pineapple salsa.
