Procedure
- Heat oven to 300°F. Line 2 sheet trays with parchment.
- In a bowl, combine all of the snack mix ingredients. In a separate bowl, whisk together butter and 1 1/2 tbsp. Vietnamese Cajun Seasoning. Pour butter mixture over snack mix, tossing to coating well.
- Spread snack mix in an even layer on prepared sheet trays. Bake 30 minutes, rotating pans halfway and stirring mixture to ensure even baking.
- Remove from oven. Toss hot mixture in large bowl with remaining 2 1/2 tbsp. seasoning. Return to sheet pans and cool completely. Store in air-tight container.
