Ingredients

  • 1/2 cup short grain rice
  • 2 cups water
  • 3 1/2 cups whole milk
  • 2 cups Thai Kitchen Coconut Milk
  • 1/2 cup sugar
  • 1 1/2 teaspoons Pure Vanilla Extract, Premium

Prep

  1. Place rice in sieve and rinse with cold water until it runs clear. Soak in cold water for 2 hours.
  2. In a saucepan bring measured water to a boil. Drain rice and add to water. Reduce heat to low and continue to cook, stirring occasionally, until water is completely absorbed, about 25 minutes. Remove from heat and cool completely.
  3. In a blender combine cooled rice, whole milk, coconut milk, sugar, and vanilla. Blend until smooth and creamy. Strain through cheesecloth and discard solids. Hold refrigerated for service.

Service

  1. For each serving, fill a glass with crushed ice. Pour 12 ounces Sobia over ice. Serve chilled.
