INSTRUCTIONS

  • 1 Preheat oven to 400°F. Spray 48 mini muffin cups with no stick cooking spray or line with aluminum baking cups. Set aside.
  • 2 Cut each beef frank into 6 (1-inch) pieces. Set aside. Mix corn muffin mix, sour cream, cheese, milk and egg in medium bowl with a fork until blended. Spoon one tablespoon batter into each muffin cup. Gently press 1 piece of beef frank into center of batter. Repeat with remaining beef frank pieces.
  • 3 Bake 12 to 15 minutes or until toothpick inserted into muffin comes out clean and tops are golden brown. Let cool in pan 5 minutes. Serve warm.
