Spicy Papaya & Pineapple Salsa

A bright and tropical salsa gets its heat from Peruvian Ají Amarillo.  This recipe was developed for the Flavor Forecast: Looking Back to Look Forward.

Ingredients

  • 1 cup papaya, 1/4-inch dice
  • 1 cup pineapple, 1/4-inch dice
  • 1/2 cup chayote, 1/4-inch dice
  • 1/4 cup red onion, minced
  • 2 tablespoons aji amarillo paste
  • 2 tablespoons lime juice, fresh
  • 1/4 teaspoon Cinnamon, Ground
  • 1/4 teaspoon salt
  • 2 tablespoons cilantro, chopped

Prep

  1. In a bowl combine papaya, pineapple, chayote, red onion, Aji Amarillo, lime juice, cinnamon and salt. Mix well until ingredients are evenly distributed.
  2. Hold refrigerated for service. Just prior to serving, fold in cilantro.
