- 4 each meyer lemon juice and peel
- 2 cups gold beets, peeled, grated
- 1/4 cup apple cider vinegar
- 2 teaspoons honey
- 10 each, crushed
- 1 teaspoon Cardamom, ground
- 1/2 teaspoon himalayan pink sea salt
- 1/4 teaspoon saffron

- In a pot over medium-high heat combine water, meyer lemon juice and peels, beets, vinegar, honey, juinper berries, cardamom, salt, and saffron. Bring to a boil, reduce heat and simmer for 5 minutes.
- Remove from heat and cool completely. Sour can be strained at this point or held with fruit and strained for service. Hold refrigerated until needed.
