  • 1 gallon water
  • 12 ounces beer
  • 1/2 cup OLD BAY® Seasoning
  • 2 tablespoons salt
  • 4 ears fresh corn, blanched, halved
  • 12 each red potatoes, medium, blanched, quartered
  • 16 pieces smoked sausage, 2-inch bias cut
  • 4 pounds shrimp, 21/25, shells on
  • 1 cup scallions, sliced

Service

  1. In a stock pot, on high heat, combine water, beer, Seasoning, and salt. Bring to a boil and reduce to a simmer.
  2. For each serving, place 2 corn, 12 potato wedges, 2 onion wedges, 4 pieces cut sausage, and 1 pound shrimp in boiling water until shrimp reaches 145°F internal temperature. Remove from seasoned water and drain.
  3. Serve in a bowl, season with additional Seasoning, and garnish with 1/4 cup scallions. Serve hot.

Chef's Tip: The OLD BAY® Seasoned water can be used to blanch the corn and potatoes for an extra layer of flavor!
