  • 1 1/4 cups water lukewarm
  • 1/2 teaspoon Sea Salt Grinder
  • 1 cup white cornmeal, pre-cooked
  • 1/8 cup vegetable oil
  • Mango Habanero Pulled Chicken
  • 3/4 pound chicken pulled
  • 1/3 cup onion, julienned
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons Rotisserie Chicken Seasoning
  • 1/2 cup Mango Habanero Wings Sauce
  • Service
  • 4 each arepas
  • 3/4 pound mango habanero pulled chicken
  • 1/2 each avocado, sliced
  • 3 ounces Cotija cheese, crumbled
  • 2 tablespoons cilantro, chopped

Arepas

  1. Stir water and salt together in a medium bowl. Gradually stir cornmeal with your fingers until the mixture forms a soft, malleable dough.
  2. Form into 4 2-inch (5-cm) diameter balls; flatten each ball to a 3/8-inch thick arepa patty.
  3. Heat oil in a large skillet over medium heat; fry arepas until golden brown about 4-5 minutes per side. Allow to cool slightly and slice in half horizontally. Hold warm for service.

Mango Habanero Pulled Chicken

  1. Mix all ingredients in a large bowl and combine. Hold warm until ready for service.

Service

  1. For each arepa, add 3 oz of mango habanero chicken, avocado slices, cotija cheese, and chopped cilantro.
