  • 2 each large yellow onions into 3/4-inch thick rounds, sliced
  • 2 tablespoons vegetable oil
  • 3 tablespoons, salted butter
  • 3/4 cup beef stock plus more, as needed
  • 1/2 cup Gruyere cheese, grated

  1. Mix flour, thyme, salt, pepper and brown sugar in bowl. Keeping slices intact, coat onion slices in flour mixture.
  2. Heat oil and butter in heavy-bottom skillet on medium heat until sizzling. Add onion slices. Cook 6 to 8 minutes per side until well browned. Drain excess oil from skillet. Reduce heat to low; add stock. Cover and cook 10 to 12 minutes or until onions are very tender, adding additional stock as need to prevent over browning. Sprinkle onion slices evenly with cheese. Cover. Cook just until cheese is melted. Remove cover and remove from heat, set aside. Reserve warm until needed for service.
