Prep
- In a dry pan, over medium heat combine cumin, coriander, and fennel seed. Toast until fragrant. Cool completely and grind in a spice grinder or mortar and pestle.
- In a bowl, combine ground toasted spices, amchur, mint, black salt, ginger, ajwan, and cayenne. Stir until ingredients are evenly distributed. Store in an airtight container.
