INSTRUCTIONS

  • 1 Heat oil in large saucepan or Dutch oven on medium heat. Add chicken; cook and stir 8 to 10 minutes or until cooked through. Add carrots, celery, onion, thyme and bay leaf; cook and stir 5 to 8 minutes or until onion is softened. Add stock; bring to boil. Reduce heat to medium; cook 20 to 25 minutes or until carrots are tender
  • 2 Remove from heat. Stir in spinach and parsley. Season to taste, as desired. Remove bay leaf before serving. Ladle into soup bowls
