  • Jalapeño Avocado Ranch Dressing
  • 1 medium avocado, peeled and seeded
  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon McCormick Gourmet™ Organic Garlic Powder
  • 3/4 teaspoon McCormick Gourmet™ Jalapeño Pepper, Ground
  • 3/4 teaspoon McCormick Gourmet™ Sicilian Sea Salt
  • 1/2 teaspoon McCormick Gourmet™ Organic Dill Weed
  • Salad
  • 1 tablespoon olive oil
  • 1/2 cup frozen corn
  • 8 cups chopped green leaf lettuce
  • 1 pint cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup shaved Manchego cheese

INSTRUCTIONS

  • 1 For the Dressing, place all ingredients in blender container; cover. Blend on high speed until smooth. Set aside.
  • 2 For the Salad, heat oil in medium skillet on medium-high heat. Add corn; cook 5 minutes or until golden brown, stirring occasionally. Drain corn on paper towels.
  • 3 Toss lettuce, tomatoes, red onion, cheese and corn in large bowl. Serve salad with Dressing.
