Al Pastor Sauce

  1. In a bowl, whisk together Hawaiian BBQ Sauce with Green Pepper Hot Sauce until fully incorporated. Hold ambient for service.

Fried Avocados

  1. In a bowl, whisk together rice flour, 1 teaspoon salt and seasonings. Set aside.
  2. In a separate bowl, whisk 2 eggs. Set aside.
  3. In a third bowl mix together panko and 1 teaspoon salt. Set aside.
  4. Cut avocados in half and remove pits. Slice halved avocados into 4 equal slices. Scoop out whole slices with a spoon, then cut slices in half. Cover with plastic wrap to discourage oxidation and place in freezer for 15 minutes (this will make handling them easier).
  5. In small batches, roll avocado slices in seasoned rice flour. Once coated, shake off excess and dunk in egg mixture. Let excess egg drip off and immediately roll in seasoned panko. Place on parchment lined sheet tray.
  6. Repeat until all avocado slices have been breaded. Cover the sheet tray with plastic wrap and place in freezer. Hold frozen until service.

Onion and Lime Relish

  1. In a bowl, combine all ingredients and mix until well incorporated. Cover and set aside. Hold refrigerated until service.

Service

  1. Set fryer to 350°F. Per each serving, fry 8 avocado slices until golden brown and avocado is warmed through. 
  2. Warm 2 corn tortillas, placing 4 slices of fried avocado, each, in the center. Top tacos with Onion and Lime Relish and Al Pastor Sauce. Serve immediately.
