Bar-B-Q Bacon Burger Skewers

Ingredients

  • 1 pound ground beef
  • 3/4 cup Stubb’s Original Bar-B-Q Sauce (or your favorite Stubb’s sauce), divided
  • A pinch each of salt and pepper
  • 4 slices sharp Cheddar cheese, cut into squares
  • 8 cherry tomatoes, halved
  • 1 cup chopped lettuce mix (I used butter lettuce mix)
  • 4 slices cooked bacon, each piece broken into pieces (optional)

INSTRUCTIONS

  • 1 Preheat oven to 375 degrees. In a large bowl, mix together the ground beef, 1/2 cup Bar-B-Q Sauce, and a pinch of salt and pepper with your hands. Divide mixture into 16 equal-sized pieces and roll them into balls. Place on a sheet tray lined with aluminum foil and bake for 17 minutes. Remove from oven, baste meatballs with 1/4 cup of the remaining sauce and top with a small square of cheese. Return tray to oven and bake another 3 minutes or until the cheese has melted. Remove from oven and let cool for a few minutes before handling.
  • 2 While the meatballs bake, cut the tomatoes, cheese, and prep the small pieces of lettuce for the toppings. You can also cook the bacon at this time as well. (Or bake it at 375 degrees for about 10-15 minutes until crisp.)
  • 3 When the meatball “burgers” have cooled enough to handle, top them with the cooked pieces of bacon. Take a toothpick and skewer a tomato half and then a piece or two of lettuce. Then skewer a bacon and cheese-topped meatball burger onto it. Repeat this until all if the burger skewers are finished and identical. Serve immediately.
