Cucumber Relish

INGREDIENTS

Ingredients

  • 1/3 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 cucumbers, peeled, seeded and thinly sliced
  • 2 shallots or red onion, , thinly sliced
  • 1 small chile, thinly sliced , (optional)
  • Chopped fresh cilantro, (optional)

INSTRUCTIONS

  • 1 BRING vinegar, sugar and salt to simmer in medium saucepan on medium heat, stirring until sugar is dissolved. Set aside to cool.
  • 2 ADD cucumbers, shallots, chile and cilantro. Let stand 20 minutes to marinate. Serve at room temperature. Or, cover and refrigerate until chilled.
  • 3 Makes 1 1/2 cups.
