INGREDIENTS

Servings: 4 (1 cup)

Ingredients

  • 1 tablespoon oil
  • 1/2 cup chopped onion
  • 2 tablespoons diced pimientos
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 2 cups water
  • 1 package Zatarain's® Yellow Rice with Broccoli Rice Side
  • 1 tablespoon butter
  • 1/2 cup frozen peas
  • 1 tablespoon lime juice

INSTRUCTIONS

  • 1 Heat oil in large skillet on medium heat. Add onion, pimientos, cumin and garlic powder; cook and stir 3 minutes or until onions are translucent.
  • 2 Stir water, Rice Mix and butter into skillet. Bring to boil. Reduce heat to low; cover and simmer 15 minutes.
  • 3 Stir in peas and lime juice. Cover and cook 10 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Fluff rice with fork before serving.
