Instructions

  1. Heat smoker to 225°F as directed by manufacturer’s instructions. Rub brisket all over with Seasoning. Place brisket directly on smoker grate, fat-side down.
  2. Smoke about 4 to 5 hours or until internal temperature reaches 160 to 165°F. Remove brisket from smoker and wrap in double layer of foil or butcher paper.
  3. Return brisket to smoker and smoke 3 to 4 hours longer or until internal temperature reaches 195°F.
  4. Transfer brisket to a clean cutting board. Remove foil, draining any juices into a large foil pan. Cut brisket against the grain into 1 1/2-inch cubes and place in pan with cooking juices. Add BBQ Sauce and brown sugar, tossing to mix well. 
  5. Place pan (uncovered) in smoker and close. Continue smoking for 1 to 2 hours longer, or until burnt ends are caramelized on all sides. Remove burnt ends from the smoker and serve with white bread and additional BBQ Sauce, if desired.
