  • 1 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 medium red bell pepper, seeded and chopped
  • 2 cups chicken stock
  • 2 cups Frank's RedHot® Bloody Mary Mix
  • 1 package McCormick® Original Taco Seasoning Mix
  • 1 can (11 ounces) whole kernel corn, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups shredded rotisserie chicken
  • 1 cup tortilla strips - Substitutescrushed tortilla chips
  • 1/4 cup finely chopped fresh cilantro

  1. HEAT oil in 4-quart saucepan on medium-high heat. Add onion and bell pepper; cook and stir 5 minutes or until softened. Stir in stock, Bloody Mary Mix, Taco Seasoning, corn and beans.
