Heat oil in large skillet on medium heat. Add chicken; cook and stir 5 minutes or until no longer pink. Remove from skillet. Set aside.
Stir water, tomatoes, Rice Mix and chili powder into skillet. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
Stir in chicken and sour cream; cover and simmer 5 minutes longer or until rice is tender. Remove from heat. Sprinkle with cheese. Let stand 5 minutes.
