Heat oil in large skillet on medium heat. Add chicken; cook 2 to 3 minutes per side or until no longer pink. Remove from skillet. Set aside.
Stir water, Rice Mix, bell pepper and onion into skillet. Bring to boil. Reduce heat to low; cover and simmer 15 minutes.
Stir in chicken; cover and simmer 10 minutes longer or until rice is tender. Remove from heat. Let stand 5 minutes. Sprinkle with Parmesan cheese.
