Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken tenders substitution Substitutions available
    • boneless skinless chicken breasts, cut into 1-inch strips
  • 2 1/2 cups water
  • 1 package ZATARAIN'S® Smothered Chicken Rice Mix
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 1 cup frozen peas

INSTRUCTIONS

  • 1 Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 2 to 3 minutes per side or until chicken is cooked through. Remove from skillet; keep warm.
  • 2 Stir water, Rice Mix, mushrooms and onion into skillet. Bring to boil. Place chicken over rice mixture. Reduce heat to low; cover and simmer 15 minutes. Sprinkle with peas. Cover and cook 10 minutes longer or until rice is tender, stirring occasionally.
  • 3 Remove from heat. Let stand 5 minutes.
