We can’t wait for this cheesy, chicken and potato-loaded casserole to make its debut at the tailgate. Ingredients are layered in a pan with a mouth-watering mixture of Zatarain’s® Cajun Hot Sauce and butter. Bake until bubbly and serve with blue cheese or ranch dressing.
Preheat oven to 400°F. Melt 4 tablespoons of the butter in small saucepan on medium heat. Stir in hot sauce with wire whisk until well blended. Set aside.
Melt remaining 2 tablespoons butter in large deep skillet. Add onion and celery; cook and stir 2 to 3 minutes or until softened. Add cream cheese, 1/2 cup of the hot sauce mixture and Creole Seasoning; cook and stir until cream cheese is melted. Stir in chicken.
Place 1/2 of the potato nuggets in single layer in 13x9-inch baking dish sprayed with no stick cooking spray. Spoon chicken mixture over potato nuggets in baking dish. Sprinkle with 1/2 cup of the shredded cheese. Top with remaining potato nuggets.
Bake 25 minutes or until potato nuggets are golden brown and crispy. Drizzle with remaining hot sauce mixture and sprinkle with remaining 1/2 cup cheese. Bake 5 minutes longer or until cheese is melted. Sprinkle with parsley. Serve with your favorite dressing such as ranch or blue cheese, if desired.
