Bar-B-Q Bacon-Wrapped Meatloaf

Ingredients

  • 1 pound ground beef (80% fat)
  • 1 pound ground pork
  • 1/2 medium onion, diced
  • 3 cloves minced garlic
  • 3/4 cup plain bread crumbs (I used Panko bread crumbs)
  • Stubb's Bar-B-Q Slider Cookin' Sauce pack
  • Stubb's Bar-B-Q Slider Cookin' Sauce spice pack
  • 2 eggs, lightly beaten
  • 8-10 bacon slices
  • Stubb's Bar-B-Q Slider Cookin' Sauce finishing sauce
  • Bake for 45 minutes, then raise heat to 375° degrees (to help crisp up the bacon) and cook another 15 minutes. Pour the finishing sauce over the meatloaf and bake another 15 minutes. Brush the meatloaf with the finishing sauce and drippings that's around the meatloaf about 7 minutes into this final baking time, if you wish.
  • Remove the cooked meatloaf from the oven (it should read at least 160° degrees Fahrenheit internally) and let sit for 10-15 minutes before slicing and serving.

INSTRUCTIONS

  • 1 Preheat oven to 350° degrees. Line a small rack or a broiling tray (with holes in it) with aluminum foil and poke holes in the foil. Line a baking sheet tray with foil and place the foil-lined rack on top. (This will allow some of the fat to drain while the meatloaf cooks.)
  • 2 Bake for 45 minutes, then raise heat to 375° degrees (to help crisp up the bacon) and cook another 15 minutes. Pour the finishing sauce over the meatloaf and bake another 15 minutes. Brush the meatloaf with the finishing sauce and drippings that's around the meatloaf about 7 minutes into this final baking time, if you wish.
  • 3 Remove the cooked meatloaf from the oven (it should read at least 160° degrees Fahrenheit internally) and let sit for 10-15 minutes before slicing and serving.
