Ingredients

  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 plum tomatoes, seeded and chopped
  • 2 teaspoons Organic Berbere
  • 4 cups packed chopped kale leaves, (about 1/4 pound)
  • 1 cup original chicken stock
  • 2 tablespoons lemon juice

INSTRUCTIONS

  • 1 Heat oil in medium skillet over medium heat. Add onion; cook and stir 3 to 4 minutes until softened. Stir in garlic; cook 1 minute or until fragrant. Stir in tomatoes and Seasoning. Cook and stir 8 minutes.
  • 2 Add kale, chicken stock and lemon juice. Bring to a boil; reduce heat. Cover and simmer 10 minutes or until kale is softened.
