Crispy Jalapeño Chicken Sandwich

Ingredients

  • 4 boneless, skinless chicken breast halves
  • 4 cups Crispy Jalapenos
  • 1 cup all-purpose flour
  • 2 eggs
  • Kosher salt and freshly ground pepper to taste
  • 4 hoagie rolls, split
  • Jalapeño Lime Sauce
  • lettuce, tomato, sliced red onion

INSTRUCTIONS

  • 1 PREHEAT the oven to 400°F. Season the chicken with Kosher salt and freshly ground black pepper. Set aside until ready to use.
  • 2 Place the FRENCH'S ® Crispy Jalapeños in a zip top bag and crush with a mallet until finely crushed. Place the crushed FRENCH'S ® Crispy Jalapeños, flour and eggs in three separate baking dishes.
  • 3 DREDGE the chicken in the flour, dip in egg and coat in the Crispy Jalapeños. Repeat with remaining chicken.
  • 4 PLACE chicken on a baking rack and bake for 15-20 minutes until the chicken is golden and cooked through, or a meat thermometer registers 165°F.
  • 5 SPREAD each half of the hoagie rolls with 1 tablespoon of the jalapeño lime sauce. Top with the Crispy Jalapeño chicken, lettuce, tomato, red onions and Crispy Jalapeños. Place the top roll on the sandwich and serve.
