1Cut 1/2 inch off top of garlic; discard. Place garlic and 1/4 cup water in shallow microwaveable dish. Brush some of the oil over garlic. Cover; microwave on HIGH (100%) 3 minutes or until garlic is just tender. Drain well.
2Grill garlic, cut-side-down, over medium-high heat 5 minutes or until garlic is golden and very tender. Cool slightly. Separate garlic into cloves; pinch each clove so roasted flesh slips out.
3Place cloves in blender. Add remaining ingredients. Cover; process until smooth. Serve over mixed salad greens or with grilled vegetables.
