Ingredients

  • 1/4 cup French's® Classic Yellow Mustard
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1 tablespoon finely chopped fresh cilantro
  • 1 teaspoon McCormick® Ground Cumin
  • 1/2 teaspoon salt
  • 4 cups cooked quinoa, cooled
  • 1 avocado, peeled, seeded and chopped
  • 1 cup black beans, drained and rinsed
  • 1 cup halved cherry tomatoes
  • 3 green onions, finely chopped
  • 1/4 cup pepitas, toasted

INSTRUCTIONS

  • 1 MIX Mustard, lime juice, honey, cilantro, cumin and salt in large bowl until well blended. Add quinoa, avocado, beans, tomatoes and green onions; toss gently to coat.
  • 2 REFRIGERATE at least 30 minutes or until ready to serve. Sprinkle with pepitas before serving.
