  • Spicy Vodka Shrimp
  • 2 tablespoon butter, divided
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup chopped pancetta
  • 1 medium yellow onion, coarsely chopped
  • 1 clove garlic, finely chopped
  • 1 package McCormick® Spicy Vodka Sauce Seasoning Mix
  • 1 can (15 ounces) tomato sauce
  • 2/3 cup heavy cream
  • Cheesy Grits
  • 3 cups chicken stock
  • 2 cups heavy cream
  • 1 cup corn grits
  • 1/2 cup sharp Cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon McCormick® Pure Ground Black Pepper
  • 3 tablespoons butter, sliced
  • Finely chopped green onions
  • Finely chopped parsley

Instructions

  1. Heat 1 tablespoon of butter in large skillet on medium heat. Add shrimp and pancetta until shrimp just turns pink. Remove from skillet. Set aside.   
  2. Meanwhile, for the Grits, mix chicken stock and heavy cream in large saucepan on medium-high heat. Bring to boil; slowly whisk in grits. Return to boil, then reduce heat to medium-low. Cover and cook 10 to 15 minutes, stirring frequently and scraping bottom of pan until all liquid has been absorbed and grits are tender. Stir in cheese, salt and pepper and butter, stirring until butter is melted. Remove from heat and keep warm.   
  3. Heat the remaining butter in skillet on medium heat. Add onion and garlic. Cook 1 to 2 minutes or until fragrant. Stir in tomato sauce, cream and Sauce Mix, whisking constantly until well blended. Cook until sauce comes to a gentle boil.  Return shrimp and pancetta back to the skillet. Reduce heat and simmer for 2 minutes, stirring occasionally.   
  4. Spoon Cheesy Grits into serving bowls. Top with Spicy Vodka Shrimp. Sprinkle with green onion and parsley, if desired.
