- Preheat oven to 400°F. Add potatoes and tomatoes in large bowl. Drizzle with oil. Toss to coat well. Spread potatoes and tomatoes in single layer on foil-lined large sheet pan sprayed with no stick cooking spray. Bake 30 minutes or until potatoes are tender, turning halfway through cooking.
- Add milk and Seasoning Mix in large skillet. Whisk until well blended. Bring to boil on medium heat, stirring frequently until slightly thickened.
- Add spinach; simmer 2 minutes or until spinach is wilted. Add potatoes and tomatoes, stirring carefully to coat. Sprinkle with Parmesan cheese and fresh basil, if desired. Serve hot.
