  • 1 cup whole milk
  • 3 tablespoons butter, cut into cubes
  • 1 package McCormick® Cacio e Pepe Seasoning Mix
  • Parmesan cheese, grated (optional) - SubstitutesPecorino Romano
  • Fresh parsley, finely chopped (optional)

Instructions

  1. Cook rigatoni pasta as directed on package. Drain well. Set aside.
  2. Meanwhile, heat large skillet on medium heat. Add pancetta. Cook until crispy, about 6 to 8 minutes. Use slotted spoon to remove from pan. Place on paper towel lined plate. Set aside. Drain fat. 
  3. Whisk milk into Seasoning Mix in skillet until well blended. Add butter. 
  4. Bring to boil on medium heat, stirring frequently. Reduce heat. Toss hot cooked pasta with sauce. Sprinkle with pancetta. Garnish with Parmesan and parsley, if desired. Serve immediately.
