For the Syrup, mix all ingredients in small saucepan. Bring to simmer on medium heat, stirring until sugar is completely dissolved. Remove from heat. Cool completely.

For the cocktail, mix cinnamon and demerara sugar in small shallow dish. Moisten rims of 4 coupe glasses with water or some of the Cinnamon Syrup. Dip in cinnamon sugar mixture to coat.

Fill cocktail shaker halfway with ice. Add remaining cocktail ingredients and prepared Cinnamon Syrup. Shake vigorously until well mixed and chilled. Stain into prepared glasses. Serve immediately.
Test Kitchen Tip: For a non-dairy version, swap in oat milk (preferably barista-style oat milk) or coconut milk in place of the heavy cream.
