  • 2 pounds boneless beef chuck roast, cut into 1-inch cubes
  • 3 tablespoons flour
  • 2 tablespoons vegetable oil
  • 1 package McCormick® Classic Beef Stew Seasoning Mix
  • 2 cups water
  • 1 bottle (12 ounces) stout beer
  • 2 cups cubed potatoes (about 1-inch cubes)
  • 1 cup chopped celery (about 1-inch pieces)
  • 1 cup chopped leeks (1-inch pieces)
  • 1 cup chopped parsnips (1-inch chunks) - Substitutescarrots

Instructions

  1. Coat beef with flour. Heat oil in large deep skillet or Dutch oven on medium heat. Add 1/2 of the beef; cook until browned on all sides. Repeat with remaining beef, adding additional oil, as needed. Return beef to skillet. Stir in Beef Stew Seasoning Mix, water and beer. 
  2. Bring to boil. Cover. Reduce heat and simmer 45 minutes, stirring occasionally. Add potatoes, celery, leeks and parsnips; return to simmer. Simmer 1 hour or until beef and vegetables are tender, stirring occasionally. Serve with crusty bread, if desired.
