  1. Lightly coat steaks with oil. Season heavy on all sides with the Seasoning. Let stand 30 to 45 minutes at room temperature.
  2. Preheat one side of the grill to about 450 to 500°F.  Two-zone fire for grill (hot side + cool side).
  3. Place steaks directly over hot side of grill. Sear 2 to 3 minutes per side until crust forms.
  4. Move to cool side of grill. Cook until internal temperature hits: 120-125°F for rare, 130-135°F for medium rare, or 140°F for medium.
  5. Meanwhile, for the Cowboy Butter mix all ingredients in small bowl until smooth. Set aside.
  6. Let rest for 10 minutes before slicing. Top steaks with cowboy butter to serve.
