  1. For the Five Spice Comeback Sauce, mix all ingredients in small bowl until well blended. Cover and refrigerate until ready to serve.  

  2. For the Burgers, mix all ingredients in medium bowl. Divide evenly and shape into 6 burger patties.  

  3. Grill burgers over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 160°F).  

  4. For the Fried Lotus, toss lotus root with corn starch to coat well. Heat oil in large deep saucepan on medium-high heat to 350°F. (Make sure not to fill saucepan more than 2/3 of the way to the top with oil). 

  5. Fry lotus root 2 to 3 minutes or until crispy, working in batches as needed. Remove from oil with slotted spoon or tongs and place on paper towel-lined plate to drain. Transfer hot fried lotus to large bowl. Sprinkle with seasoning, tossing to coat evenly. 

  6. To assemble, spread comeback sauce on cut sides of rolls. Place arugula on bottom half of roll. Place burger on top and layer with fried egg and a couple crispy lotus pieces. Serve burgers with remaining fried lotus on the side with remaining comeback sauce for dipping.
