Pancakes with a protein boost! Flavored with McCormick® Pure Vanilla Extract and Ground Cinnamon, this homemade cottage cheese pancake recipe is one you can plan on making on repeat.

  1. Combine cottage cheese and eggs in blender, blend until smooth. Add vanilla to blender and quickly blend until incorporated.
  2. Combine flour, sugar, baking powder and cinnamon in a bowl and stir to combine. Add cottage cheese mixture to flour mixture and stir together until just combined. Set aside.
  3. Heat a large nonstick pan on medium-low heat for 5 minutes. Heat oil in pan until shimmering. Using paper towels, wipe out oil leaving a thin film on bottom and sides. Add batter to pan in 1/4 cupful, gently spreading out if needed. Cook until top forms small bubbles, then flip and cook until lightly browned on the bottom. Repeat with remaining batter, keeping finished pancakes in a warm oven until ready to serve.
