  1. Place cottage cheese and eggs in blender container. Cover; blend until smooth. Add vanilla; pulse until well blended. 
  2. Mix flour, sugar, baking powder and cinnamon in medium bowl. Add cottage cheese mixture, stirring just until combined. Set aside.
  3. Heat large nonstick skillet on medium-low heat. Spray lightly with no stick cooking spray. Scoop batter by the 1/4-cupful, spreading into an even circle, if needed. Cook until edges are set and top is bubbly. Flip; cook until lightly browned. Keep warm in warm oven until ready to serve. Repeat with remaining batter. Serve drizzled with syrup, topped with fresh fruit or sprinkled with extra cinnamon, if desired.
