- ARRANGE fries in large shallow baking pan. Cook as directed on package, until crispy.
- MEANWHILE, melt butter in small saucepan on medium heat. Whisk in flour; cook and stir 1 minute. Gradually whisk in milk. Cook, stirring frequently, until sauce is thickened. Add 1/2 cup of the Cheddar cheese and Velveeta, stirring until well blended and smooth. Stir in RedHot Sauce until blended. Remove from heat.
- REMOVE fries from oven. Preheat broiler on high. Drizzle cheese sauce evenly over fries on pan. Sprinkle with remaining 1 cup Cheddar cheese and bacon. Broil 2 to 3 minutes or just until cheese is bubbly. Top with onions and drizzle with Ranch to serve, if desired. Add more RedHot Sauce for an extra pickle-y kick.
