Lamb Kofta Wrap

Bright and fresh, this wrap packs in flavor. By using the McCormick® Culinary Moroccan Seasoning, the flavors of the Middle East are able to come through with ease. This recipe features our new Global Blends Moroccan Seasoning.

Ingredients

  • Yogurt Tahini Sauce
  • 3/4 cups Greek yogurt, plain
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon mint, chopped
  • 1 teaspoon garlic, minced
  • 2 teaspoons Moroccan Seasoning
  • 1/2 teaspoons salt
  • Kofta
  • 1 1/2 pounds ground lamb
  • 2 tablespoons Moroccan Seasoning
  • 2 tablespoons mint, chopped
  • 1/3 cup red onion, grated
  • 2 teaspoons garlic, minced
  • Wrap
  • 1/2 cup cucumber, julienne
  • 1/2 cup tomato, 1/4-inch dice
  • 1/4 cup red onion, thinly sliced
  • 1 teaspoon parsley, chopped
  • 1 teaspoon lemon juice
  • 1 teaspoon Chili Powder, Choice
  • 2 each pitas, halved

Tahini Yogurt Sauce

  1. Combine yogurt, tahini, lemon juice, mint, garlic, Moroccan Seasoning, and salt in a bowl. Whisk until well combined. Cover and refrigerate until service.

Kofta

  1. Mix lamb, Moroccan Seasoning, mint, red onion, and garlic until well combined.
  2. Chill in refrigerator for 30 minutes to allow flavors to meld together.
  3. Form lamb mixture into twelve 2-ounce oval shaped patties.

Prep Wrap

  1. Combine cucumber, red onion, tomatoes, parsley, lemon juice, and chili powder in a bowl until well-dressed. Cover and refrigerate until service.

Service

  1. Set grill to medium high. For each serving, grill 3 kofta until well marked on both sides and an internal temperature of 155°F is reached.
  2. Warm one half pita pocket on grill.
  3. Spread 1/4 cup of sauce inside of the warmed pocket half. Place 3 grilled koftas inside each wrap and top with 1/3 cup of vegetables. Serve warm with a side of fries.
