Creole Fruited Rice Salad

INGREDIENTS

Servings: 8 (3/4 cup)

Ingredients

  • 2 1/2 cups water
  • 1 tablespoon oil
  • 1 package Zatarain's® Jambalaya Rice Mix
  • 1/4 cup poppy seed dressing
  • 2 tablespoons chopped parsley
  • 2 tablespoons orange juice
  • 1 tablespoon honey
  • 1 can (11 ounces) mandarin oranges, drained
  • 1 cup red grape halves substitution Substitutions available
    • green grape halves
  • 1 apple, such as Red Delicious or Gala, cored and cut into chunks
  • 1/4 cup sliced celery

INSTRUCTIONS

  • 1 Bring water and oil to boil in medium saucepan. Stir in Jambalaya Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Remove from heat. Let stand 5 minutes
  • 2 Spoon rice mixture into large bowl. Cool to room temperature. Fluff with fork
  • 3 Meanwhile, mix poppy seed dressing, parsley, orange juice and honey in small bowl. Add fruit and celery to rice mixture; toss gently until mixed. Drizzle dressing over salad; toss gently. Serve immediately. Or, cover and refrigerate until ready to serve
