Instructions
- Remove the thin membrane from the underside of the rack of ribs. Pat each rack of ribs dry with clean paper towels. Massage spice rub into the ribs on all sides. Leave the ribs at room temperature for up to 1 hour before grilling.
- Prepare charcoal grill for indirect cooking. Layer soaked wood chips and charcoal. Light charcoal as directed. Once coals are ashed over, spread them out on only one side of the grill - Ribs will be placed on the side not directly over the coals. Cover grill and heat until temperature reaches between 225°F and 235°F.
- Place ribs on grill bony-side down (on the side without charcoal). Grill with grill lid closed, for 2 1/2 to 3 1/2 hours, or until the meat begins to shrink back from the ends of the bones. To ensure even cooking, set an oven thermometer next to the ribs.
- Baste ribs on both sides with Stubb's Bar-B-Q Sauce. Grill 5 to 10 minutes longer. Transfer rib racks to a baking sheet and cover loosely with foil. Let rest 10 to 20 minutes. Cut into sections to serve.
Test Kitchen Tip: Also, great with other Stubb's Bar-B-Q Sauces, such as Hickory Bourbon, Smokey Brown Sugar, or Sweet Honey and Spice.
