- Mix vinegar and water in small microwave-safe bowl. Microwave on HIGH 30 seconds. Stir onion into vinegar; let stand at least 10 minutes or until ready to serve.
- Place cheese, half-and-half and butter in small saucepan. Cook on medium-low heat, stirring frequently, 4 to 6 minutes or until cheese is melted. Stir in chopped jalapeños.
- Meanwhile, heat beans according to package directions. Stir in chicken. Cook 1 minute longer or until chicken is heated through.
- Spread tortilla chips on large serving platter. Top chips with cheese sauce, chicken and bean mixture, and pickled red onions. Garnish with cilantro and additional jalapeños to serve.
