  • Smoked Chicken
  • 2 pounds boneless skinless chicken thighs
  • 1/4 cup Stubb's® Texas All Purpose Rub
  • 2 tablespoons oil
  • 1/2 cup Stubb's® Whiskey & Peach Bar-B-Q Sauce
  • 5 Potato buns, for serving
  • Slaw
  • 2 cups thinly sliced red cabbage
  • 1/2 cup sour cream
  • 2 tablespoons pickle juice - Substitutesapple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon McCormick® Pure Ground Black Pepper

Instructions

  1. Heat smoker to 225°F. Toss chicken with seasoning and oil; place in large aluminum roasting pan. Place pan on grill, close lid and smoke for 2 hours or until internal temperature reaches 160°F. Remove chicken from grill and let rest for 15 minutes.
  2. Meanwhile for Slaw, mix cabbage, sour cream, pickle juice, salt and pepper in a medium bowl. Cover and refrigerate until ready to serve.
  3. Place chicken in large bowl. Shred chicken using two forks. Add Bar-B-Q Sauce, stirring gently to mix well.   
  4. Divide chicken among bun bottoms and top with slaw and top bun. Serve with additional Bar-B-Q Sauce, if desired.
