1Put the buttermilk into a large bowl and add 2 tablespoons Stubb’s Bar-B-Q Spice Rub. Add the fish strips, stir to coat, and let stand for 20 minutes.
2After marinating, gently wrap the fish sticks in bacon. One strip of bacon per fish stick. Heat the vegetable oil over medium-high heat in a medium sauté pan. Place the fish sticks in the pan and cook undisturbed for 2 to 3 minutes. Softly flip to fish sticks, browning each side. Sauté the fish sticks until each side is browned and crispy. This should take about 10 minutes. Let sit for 5 minutes. Serve with Stubb’s Sweet Heat Bar-B-Q sauce for dipping.
